Fried egg with beans and roast potatoes

If you're looking for a kick-ass breakfast/brunch recipe for this weekend, here's a great one for you: Rosemary Dijon potatoes and cannellini beans with tomatoes and bacon topped with a fried egg. You can follow this recipe or totally simplify the whole thing by using frozen diced potatoes and canned beans. But if you feel like cooking and want to give this a shot, I promise you that it will be worth the extra effort!


Fried egg with beans and roast potatoes

For the potatoes:
About 12 small potatoes, washed with skin on.
2 sprigs of fresh rosemary
2 cloves of garlic, finely chopped
2 tbsp of grainy Dijon mustard
2 tbsp of olive oil
1 tbsp of butter
a good pinch of salt and pepper

For the beans:
1 can of cannellini beans, drained (but reserve about 1/2 cup of the brine)
4 strips of bacon or pancetta
1 tomato, chopped
1 shallot, finely diced
1 tbsp of red wine vinegar
3 sprigs of fresh thyme, finely chopped

1 egg per person

1. Set a large pot of water on the stove top. You will want to par-boil your potatoes. And pre-heat the oven to 425 degrees F.

2. While your potatoes are boiling away, cook the bacon in a pan until crispy. Set aside and reserve some of the bacon fat. Cook the shallots in the bacon fat, for about 4 minutes, on medium-high heat. Add the garlic, stir for 1 minute. Add in the beans, brine, thyme, tomatoes, vinegar. Stir and cook for 5 minutes. Drizzle with a bit of olive oil and season to taste. Set aside.


3. Drain your potatoes and cut them into bite sized pieces. Toss them around with oil, butter, dijon, garlic, salt, pepper and rosemary. Place them in the oven until they get crispy and are well cooked.

4. To make the potatoes extra crispy, I place them in a cast iron pan that I've lightly oiled, mash them down with a spatula, and cook them on the stovetop until I get a golden crust on the bottom.

5. Place a portion of potatoes on the place, top with beans and an egg cooked sunny side up. You want that rich yolk to be runny. It's amazing with the beans! Enjoy!
